Like many other cuisines Mexican cuisine runs the gamut of basic dishes to more extravagant fare. Torta’s are Mexican sandwiches that are served on crusty rolls, referred to as telera or bolillo. They can be served either hot or cold and can be filled with many different ingredient combinations.

Falling under the dessert category, Churros are a yummy, fried, pastry stick, of sorts. They are rolled in sugar and cinnamon while they are still warm. For best results, it is recommended that they be fried, in a deep fryer.
A more extravagant example of Mexican cooking is Pollo Pibil. In a nutshell, this dish is chicken that has been marinated in oranges and a variety of spices, which include allspice berries, peppercorns, cumin and oregano leaves. It is usually barbecued in a pit, or pib, while encased in banana leaves. (The banana leaves are used to seal in, both, flavors and juices.)
